In this feature, I will talk about brunch. Sometimes I'll cook something, sometimes I'll bake something, and sometimes I'll review brunch dishes at a local restaurant. In addition, I'll talk about the setting for each of the brunches; that is, what to wear for such an occasion. This feature won't appear every Sunday because, let's face it, at some point I'm going to need to write about something other than food!
Today's inaugural edition of Sunday Brunch is perfect for a lazy morning. I worked yesterday, so I definitely didn't feel like going out to eat or putting together something complicated this morning. Still, I wanted something delicious to start off my day! I slept in, and threw together a few ingredients in my fridge. The result was pretty tasty, and pretty healthy, too! Well, eggs have a good bit of cholesterol, but the rest wasn't too bad.
First, allow me to set the scene with a little wardrobe description...

And now, the noms!
Creamy Spinach Omelet (adapted from Mr. Breakfast)

Ingredients
- 2 eggs, lightly beaten
- 1 T unsalted butter
- 1 handful of spinach
- 2 oz. reduced fat cream cheese
Directions
- Combine the cream cheese with the spinach. It's going to be lumpy and hard to stir, but don't worry! It doesn't have to be evenly combined.
- Heat an omelet pan over medium-high heat.
- Add the butter and let it melt, then sizzle until it looks like it's just about to brown. Then, add the eggs.
- Keep the pan moving so that the eggs shift around and cook evenly. You will also need to scrape down the sides with a spatula.
- Once the bottom looks pretty evenly cooked, add the spinach and cream cheese mixture.
- Fold over the omelet so that it looks like a semi-circle with the good stuff inside.
- Reduce heat to medium-low and cook until the cream cheese starts to melt and the spinach starts to wilt, about one minute on each side. Err on the side of undercooking! Overcooked eggs are tough!
- Enjoy!

Delicious! I had my weekday standard - Joe's O's with sliced banana and Unsweetened Vanilla Almond Breeze. I love a good egg dish when I have the time, though!
WHAT is unsweetened vanilla almond breeze? I don't know what that is but I feel like I must have it!
It's magical almond milk, half the calories of normal milk. It's vanilla flavored but without sugar; I really don't know how they do it. I don't like it with everything, but it tastes particularly delicious with bananas! And it's usually wicked cheap at TJ's.
I love making waffles, but mornings usually consist of me eating by myself as the hubs doesn't eat breakfast, or brunch for that matter. We do have breakfast for dinner once a week and the hubs always makes me a delicious omelet filled with goodies from past dinner leftovers. They are always extra yummy because he made them. :)
