The final summer salad in this series is one of my favorite recipes. Something you should know about me is that I'm completely obsessed with feta cheese. I love it on pizza, in salads, in any kind of combination with tomatoes...but the marriage of creamy feta with juicy summer watermelon is just heaven. Some people use basil in a watermelon heirloom salad, but I prefer it with mint. This was also rather convenient for me, since the mint in our very own garden was begging to be eaten (that stuff GROWS). With freshly harvested herbs, this was the first dish we made with an ingredient we grew! I'm looking forward to many more.
Watermelon Heirloom Salad
Ingredients
- 1 quart watermelon, cubed
- 3 heirloom tomatoes (I used one green, one yellow, and one purple...the more colorful the better!), cubed
- 1/4 cup feta, crumbled
- 1/4 cup mint, minced
- 2 tsp red onion, minced
- balsamic vinegar, olive oil, salt, and pepper to taste
Directions
Toss together watermelon, tomatoes, feta, mint, and onions. Drizzle oil and vinegar, and sprinkle on some salt and pepper.
