My favorite thing about meatloaf is that no two recipes are alike. They can be simple or complicated, spicy or classic, they might taste like mom's recipe or they might be something completely innovative. It's almost as though the recipes reflect who the chef is. I think my recipe is pretty representative of my personality - it includes some veggies, some spices, and of course, some Coca Cola.
Julia's Meatloaf
Ingredients:
- 1.5# ground beef
- 1 small carrot, minced
- 1 red bell pepper, minced
- 1/2 onion, minced
- 3 cloves garlic, minced
- 1 egg
- 1.5 c whole grain bread crumbs
- 2 t mustard
- 1 t black pepper
- 1/2 t salt
- 1/2 t cayenne pepper
- 1 t chili powder
- 1 t worcestershire sauce
- 1/2 c ketchup
- 1/2 c Coke
Directions:
Combine all ingredients through worcestershire sauce in a large bowl. Spread into loaf pan. Combine ketchup and Coke in a small bowl and use a pastry brush to glaze loaf. Bake at 350˚ for 40-45 minutes.

Not that I needed a reminder for how much I love you...but this recipe did just that! Meatloaf is my favorite food (besides cereal). And you're right, it never tastes the same. One thing I love about it is that you can't mess it up! My favorite part of my meatloaf is the glaze I make, which is a mix of ketchup, cider vinegar, and brown sugar.
I love your addition of Coke in the glaze, I usually put brown sugar in my meatloaf and it gives it just the right amount of sweetness! :)
I wasn't a meatloaf fan, until I took a cooking class last year. We learned how to make a roasted red pepper/pesto meatloaf and I am officially a meatloaf lover. It's one of my favorite dishes now.
Nice meatloaf!!!!! Looks good, Daddy Booth,Dan, and Kate will only eat the meatloaf if it has tomato sauce on(like Nana made it). So if you are looking for a change of pace I add some ground pork, and chopped onions, with worchshire sauce, ketcup,seasoned bread crumbs, I also like to add parsley, and then for some zing I add Old Bay seasoning and ground pepper, sometimes I just open the spice cabinet and just see what I can find, and of course IT NEVER tastes the same way twice.
When I was a kid we had it with brown gravy and potatoes, sometimes a hard boiled egg in side....I am so glad you are having fun cooking and I am even HAPPIER that you are writing about how much you enjoy married life. I am missing so much that you are all scattered around, but my heart is happy that you are trying to stay close...All my best, and love to you both.
