I can't stand coleslaw. Or potato salad, for that matter. I know, I know - they're an absolute staple when it comes to summertime cookouts. They're just always swamped with mayonaise! I was psyched when I came across this sweet, smokey, very green side dish. Best of all, this broccoli slaw has very little mayo.
Broccoli Slaw (adapted from The Kitchn)
Ingredients
- 2 heads broccoli
- 1/2 cup plus 2 Tbsp dried cherries
- 1/2 cup red onion, minced
- 3/4 cup slivered almonds
- 1/4 cup bacon bits
- 1/4 cup mayonaise
- 3 Tbsp lemon juice
- 2 Tbsp rice wine vinegar
- 1 Tbsp sugar
- Salt and pepper, to taste
Directions
Grate the raw broccoli with a food processor. In a large bowl, combine shredded broccoli, dried cherries, red onion, almonds, and bacon.
In a small bowl, whisk together the mayo, lemon juice, vinegar, sugar, salt, and pepper. Toss over broccoli mixture.
Allow to chill in refrigerator for at least 30 minutes.
